This was a last minute ‘throw together’; the very best kind! That’s what my Daddy used to do. He would just start throwing different ingredients in a pan and the results never failed him or my taste buds. He was the only man I ever knew that could bake a cake without any recipe at all and the cake would be delicious – this always amazed me.
The chocolate in this dish just deepens the flavor! I love kale, but I am very aware that if not one right it can be a very ‘bitter’ dish. The dark roasted cocoa counter-acts the bitterness of the kale and the bacon flavors it so wonderfully.
Like broccoli, cauliflower, and collards, kale is a descendent of the wild cabbage. It freezes well and actually tastes sweeter and more flavorful after being exposed to a frost.
1 lb grass fed bacon
1 lb grass fed tri-tip
1 tsp dark roasted cocoa
1 tsp granulated garlic powder
½ tsp course ground pepper
½ tsp celtic sea salt
1 lb organic kale
1 med red onion
Cut bacon and tri-tip into 1 inch pieces. Place in skillet under medium heat. Sprinkle cocoa, garlic, pepper, and salt over meat. Cook for 10 minutes. Add Kale and onion and cook for 15 more minutes, folding in kale and onion.
